Ingredients:
- 1 large bitter gourd (Pavakka), finely chopped
- 1 cup grated coconut
- 1/2 cup finely chopped onion
- 2 green chilies, diagonally sliced
- A few curry leaves
- 1 tablespoon coconut oil
- 3/4 teaspoon mustard seeds
- 2 dried red chilies, broken
- Salt to taste
Instructions:
- In a bowl, combine the finely chopped bitter gourd with the ingredients numbered 2 to 5 (grated coconut, chopped onion, sliced green chilies, and curry leaves).
- Heat a cheena chatti or a pan over medium heat. Add coconut oil, splutter the mustard seeds, and fry the dried red chilies. Next, add the bitter gourd mixture along with a pinch of salt. Sprinkle a small amount of water, cover the pan, and cook over low heat. Stir occasionally.
- Cook until the bitter gourd is tender and the thoran is dry, which should take about 12-15 minutes.
- Serve this delicious bitter gourd thoran with rice and other side dishes.
